Only a small area has been selected for this wine produce from vines that are more than 30 years old.
Tannin is more discernible in this wine that allows it to be stored in barrels for one year. Once the wine has evolved, the tannins melt away to leave aromas more akin to dark fruits.

This vineyard stands out by the nature of the ground on which it stands “galets roulés” and has been owned by the family for the past three generations. The vines are more than 50 years old. The yield is lower and the concentration is higher.
The vinification is in oak barrels that are stored for over 24 months. The wine that is produced is one that can be kept a long time in the cellar and drunk years later.

Produced on a loess, sedimentary soil.
Jaboulet is the only wine producer to grow and produce this appellation using 100% Roussanne grapes. This variety only produces small grapes that are bunched close together and it is this that brings forth the fine flavours.
Ermitage can be written with or without «H» according to the books.

A wine that is produced on land destined for this type of wine, but no producted with young wines.
White
This is a very aromatic grape that turns yellow once they reach full maturity. A fine and pleasant wine with fruit flavours that are characteristic of the grape.
Red
Syrah grape. Producing a supple wine with an accent of red fruit.
